Healthy Nut Granola
Healthy Nut Granola is a great start to your day and simple to make. You probably have everything in your pantry already. If you don't have the dried fruits and nuts called for feel free to sub your favorites. This is not an exact science.
Makes 2 1/2 pounds
3 1/3 c. puffed corn/ wheat
1 1/2 c. rolled oats
1 c. pecans, chipped
1 c. macadamia nuts, roughly chopped
1 c. flaked coconut
1/3 c. linseeds
1/3 c. sunflower seeds
1/3 c. almonds, chopped
1 c. dried apples, chopped
1 c. dried apricots, chopped
2/3 c. dried pears, chopped
1/2 c. maple syrup
1 t. vanilla extract
Preheat oven to 350*. Mix all except the syrup and vanilla in a large bowl.
Place syrup and vanilla in a sauce pan and heat over low 3 minutes, or until syrup becomes very thin.
Pour syrup mix over cereal and toss lightly to coat. Spread in a single layer in sheet pan and bake about 20 minutes, turning frequently, until granola is lightly toasted. Allow cereal to cool before transferring to an air tight container.
